Spiced Coffee Texas Brownies Tim's BBQ Sauce  

Mocha Nut Muffins

    ½ cup brewed coffee
    ¼ cup butter, melted
    1 cup brown sugar
    2 cups flour
    2 eggs
    1 teaspoon vanilla
    2 tbsp cocoa powder
    ½ teaspoon baking powder
    ½ teaspoon baking soda
    ½ cup chopped walnuts
    ¼ teaspoon salt
    2 tablespoons sugar
    ½ teaspoon cinnamon

    Preheat oven to 375 degrees, line 12 muffin cups with paper liners and set aside.  In a large bowl, combine coffee, melted butter, brown sugar, eggs and vanilla.  Beat until blended.  In a sifter or strainer, sift flour, cocoa powder, baking powder, baking soda and salt into coffee mixture, then add nuts.  Spoon batter into muffin cups.

    In a small bowl combine sugar and cinnamon, sprinkle over each muffin.  Bake for 17 to 20 minutes or until muffins are firm.  Cool in pan 4 minutes then remove to wire racks to cool.  Very good served warm.
